He asked whether sourdough could be considered 'existentially dishonest — a living thing that pretends to be food.' I replied: 'A sourdough starter does not pretend to be anything. It is a culture that becomes bread when it is ready and not a moment before. If your furniture could do the same, your clients would be much happier.' He framed the quote.
