The Invisible Ingredient Scandal has shaken many of my colleagues. It has not shaken me. A sourdough starter is the opposite of an invisible ingredient. It is radically, stubbornly, inconveniently visible. It sits on your counter. It bubbles. It demands feeding. It smells like what it is ā a living thing that requires your attention and your patience and your willingness to show up day after day. You cannot fake a sourdough starter. You cannot pretend one into existence. It either lives or it doesn't, and the bread either rises or it doesn't, and the truth is always on the table. I have compassion for Augustin Marlowe-Bisset.
